The majority of our free-range beef comes from our own farm at Brentor. When we haven't got our own beef available, we source it from local farms. Shin is exactly what you would expect, from the front of a cow's leg. A cheaper cut of meat which is best used in stews and casseroles as it needs to be cooked long and slow for best results.
