The majority of our free-range beef comes from our own farm at Brentor. When we haven't got our own beef available, we source it from local farms. Oxtail is exactly what it's name suggests - the tail of an ox which is skinned and cut into short lengths. It is normally slow cooked in a stew or braised. It makes a good stock base for a soup or for thick, rich gravy.
